Cooking fats, oils and greases, if not interrupted, eventually mean trouble for business. Cooking by-products begin to restrict the facility's drain outflow and back-ups occur. A new 4 inch pipe (LEFT) allows water to flow at 450 Gallons Per Minute. Clogged to 3 inches (CENTER) flow is reduced by 70% to 125 GPM. Clogged to 2 inches (RIGHT) flow is reduced to just 11% that of new pipe, just 49 Gallons Per Minute.

Having an old-fashioned grease trap cleaned out is a messy job. Most restaurant owners put it off as long as possible. It takes a very brave soul to clean out a passive grease trap, and only licensed professionals are permitted to inspect and pump out the larger in-ground grease traps. Kitchen grease and septic tanks with a drainage field don't mix. The release of kitchen grease, fats and oils very quickly cause irreparable damage to drainage property. Researchers have found that septic drain fields, used by restaurants, failed due to too much "richness" of food waste in the flows. This richness is actually fats, oils and grease. Every drainage field has its maximum tolerance point. If the wastewater richness exceeds this tolerance point, the septic field's life span begins to shorten and the field is destined to fail. The average lifespan of a septic drain field servicing a restaurant with a passive grease trap is just 18 months. Replacing a septic field typically costs $15,000 to $40,000 to $100,000. At some locations, with no land available to replace the field, grease has resulted in the closure of the business.
